Tzatziki Sauce with Quick Snack Cucumbers

A delicious way to incorporate more Quick Snack Cucumbers into the season is with a yogurt-based sauce that goes with almost everything. Really! It’s simply delicious with toasted pita or chips, as well as versatile sauce to pair with your favorite grilled protein or vegetables.

INGREDIENTS

  • About 10 Quick Snack cucumbers (chopped)
  • 1 cup Greek-style plain yogurt
  • 1 garlic clove, finely grated
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons chopped fresh dill, plus extra for garnish
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • Toasted pita or pita chips

PREPARATION

After chopping the cucumbers, allow them to drain on a paper towel or cheese cloth. Squeeze out any excess water.

DIRECTIONS

  • Stir together the yogurt, cucumbers, garlic, lemon juice, and dill in a medium bowl. Season with salt and pepper.
  • Taste and adjust the seasonings to your liking.
  • Before serving, garnish with more fresh dill.
  • Serve with toasted pita or chips. Enjoy!
