Asian Cucumber Salad

This recipe for Asian Cucumber Salad is a deliciously savory but refreshing dish. The sauce is light like a pickled salad with notes of umami flavor that come from the soy sauce and toasted sesame oil. It’s also perfect as an appetizer or even a light lunch paired with a bowl of steamed rice.

INGREDIENTS

  • About 10 Quick Snack cucumbers (sliced thin)
  • 1 tablespoon rice vinegar
  • 1 tablespoon light soy sauce
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon sesame oil.

PREPARATION

Slice the Quick Snack cucumbers into very thin slices. Since the skin can be eaten on these snack cucumbers, they are so easy to slice and eat in a salad. No need for peeling.

DIRECTIONS

  • Combine the vinegar, soy sauce, sugar, salt and sesame oil in a bowl with the sliced cucumbers.
  • Mix well.
  • Eat and enjoy!
